Ingredients (2 servings):
- 2 sous vide chicken breasts
- 3 romaine lettuce hearts
The Dressing:
- 6 anchovy fillets
- 1 small garlic clove
- 1 teaspoon (5 g) of kosher salt
- 2 large egg yolks
- 2 tablespoons (30 ml) of fresh lemon juice
- 1 tablespoon (15 g) of Dijon mustard
- 2 tablespoons (30 ml) of olive oil
- 1/2 cup (120 ml) of vegetable oil
- 3 tablespoons (45 g) of finely grated Parmesan
- 1 teaspoon (5 g) of freshly ground black pepper
The Croutons:
- 3 thick slices of white bread, cut into cubes
- 3 tablespoons (45 ml) of olive oil
