Ingredients (8 servings):
- 8 pieces of bone-in short ribs, 5-6 ounces (140-170 g) each
- 2 and 2/3 cups (600 ml) of water
- 1 cup and teaspoon (150 ml) of light soy sauce (usukuchi)
- 3 tablespoons (45 ml) of pear juice
- 3 tablespoons (45 ml) of apple juice
- 2 1/2 tablespoons (23 ml) of mirin
- 1 tablespoon (15 ml) of Asian sesame oil
- 1 1/4 cup (250 g) of sugar
- 1 teaspoon (5 g) of freshly ground black pepper
- 1 small onion
- 1 small carrot
- 3 scallions (white parts only)
- 2 garlic cloves
- rapeseed or other neutral oil for frying
